Cauliflower fritters with hard cheese are a delicate, airy, yet rich dish that will pleasantly surprise even those who are usually indifferent to cabbage. Thanks to the finely chopped cauliflower, the fritters have a soft and almost creamy texture inside, while a golden crust makes them especially appetizing. Hard cheese adds a distinct flavor and a slight saltiness, creating a harmonious combination with the vegetables. Cauliflower fritters pair wonderfully with chicken, turkey, roasted vegetables, fish, and can also serve as a light dinner on their own. This is a versatile dish that looks equally good on an everyday table or as an unusual appetizer.

Chicken egg - 1 pcs.
Hard cheese - 100 g
Wheat flour - 30 g
Dill fresh - ⅕ bunch

Wash the cauliflower, break it into small florets, and transfer it to a blender bowl. Chop the vegetables until they form fine crumbs, then transfer them to a deep dish.

Crack 1 chicken egg, add finely chopped dill greens.

Grate the hard cheese on a fine grater and add it to the rest of the ingredients. In addition to hard cheese, you can use other options: pungent Parmesan for a richer taste, delicate mozzarella for a soft stretch, cheddar for brightness, or a mixture of several varieties - this will add complexity and depth to the flavor.

Add wheat flour, salt, and spices to taste to the mixture. I included a little black pepper, smoked paprika, and dried garlic for flavor.

Thoroughly mix the ingredients until the pancake batter reaches a smooth, uniform consistency.

Using a tablespoon, drop small amounts of batter onto a pan with heated olive oil, forming round pancakes about 1 cm thick.

Fry the items over medium heat until golden brown on both sides.

Serve the pancakes hot or warm, while the melted hard cheese remains gooey inside. The dish can be complemented with a spoonful of sour cream, natural yogurt, a spicy sauce based on garlic and herbs, or a light creamy dressing.

A fresh salad, pickled onions, or tomato slices will also work well to complement the mild flavor of the main dish. Enjoy your meal!
