Prepare all the necessary ingredients to ensure the cooking process is as comfortable and quick as possible.
Slice the eggplants lengthwise into 1 cm thick pieces. Season them with salt and pepper, then fry in vegetable oil on both sides until golden brown.
Dice the ripe tomatoes and drain them in a sieve to remove excess liquid. Then, add minced garlic, salt, spices, and chopped herbs to the tomatoes, mixing thoroughly.
Brush the Adyghe cheese with oil, sprinkle with seasoning, and fry on both sides in a well-heated pan until golden brown.
Now it's time to assemble our dish! Place the prepared tomatoes on top of the fried eggplants, and then layer the fried cheese on top.
When serving, garnish the dish with fresh herbs to your liking. The result will be not only an appetizing but also a very beautiful appetizer that will please both the eye and the stomach.
