Eggplant is perfectly suited for hot appetizers. This vegetable, stuffed with garlic, will appeal to lovers of spicy dishes. The dish takes literally 20 minutes to prepare; the oven does all the rest of the work for you. You just need to lightly grill the eggplant, then bake it in the oven until done.

Wash the vegetables thoroughly. Peel the garlic.
Cut each clove of garlic in half.
Slice the eggplant in half lengthwise. On each eggplant half, make 10 small incisions using a small knife. Carefully insert half a clove of garlic into each incision, ensuring it is fully or almost fully embedded in the eggplant flesh.
Grill the eggplant until lightly golden. Meanwhile, preheat the oven to 250°C. Place the grilled eggplant cut-side up in the bottom of a baking dish. Transfer the dish with the eggplant to the top rack of the oven. Bake until the skin is charred and begins to crack, which will impart a special aroma to the dish.
Once the eggplant skin is charred, remove the baking dish from the oven. Season the vegetable with salt to taste and drizzle generously with olive oil to enhance its tenderness.
Serve the eggplant with garlic alongside a portion of Korean carrots, creating a harmonious blend of flavors and textures.
