Don't rush to throw away the catfish head after filleting! You can make an incredibly rich, hearty, and aromatic fish soup from it. The main thing is not to forget to remove the gills so that the broth doesn't taste bitter, add potatoes for satiety, and make a golden sauté of carrots and onions. This simple recipe will turn an ordinary fish head into a real culinary masterpiece!

Prepare all the ingredients: separate the catfish, thoroughly rinse the head, removing the gills. Peel and wash the potatoes, onions, and carrots. Rinse the parsley and pat it dry with paper towels. Get a pot, a sieve, a grater, and a small frying pan ready.
Place the catfish head in a pot and cover it with water. Bring to a boil over high heat. Carefully skim off any foam, then reduce the heat to medium and cook the fish for 8-10 minutes.
Dice the potatoes into 1-1.5 cm cubes. Grate the carrots coarsely, and slice the onion into half-rings. Separate the parsley leaves from the stems and chop them finely.
Heat a skillet over medium heat, add the oil. Sauté the onion for 1-2 minutes until golden. Then add the carrots and cook, stirring, for another 2-3 minutes.
Remove the catfish head from the broth. Separate the tender fish meat from it. Strain the broth through a sieve and return it to medium heat. Bring to a boil and add the potatoes. Cook for 7-8 minutes.
Add the sautéed vegetables and fish pieces to the broth with potatoes. Season with salt and pepper, then add the bay leaf. Continue to cook the fish soup for another 6-7 minutes, until the potatoes are tender.
Remove the pot from the heat, add the chopped parsley, and stir thoroughly.
Serve the aromatic fish soup, garnished with finely chopped green onions.
