Start by preparing: thoroughly wash and thaw the blackberries. Then, prepare a jar with a lid and sterilize it using any method convenient for you.
Place the blackberries in a saucepan and generously cover them with sugar. Let the berries sit for 2 hours to allow them to release their juices, which will form the base of your jam.
Place the saucepan with the fragrant berries over low heat. Add the cinnamon stick and lemon zest. As soon as the mixture boils, carefully skim off any foam that forms. Simmer the berries for 10-15 minutes, allowing them to absorb all the flavors.
Remove the cinnamon stick from the saucepan. Using an immersion blender, purée the blackberries directly in the saucepan until smooth.
Pour fresh lemon juice into the berry puree. Stir thoroughly and bring the jam to a boil once more to achieve the perfect consistency.
Pour the hot jam into a sterilized jar and immediately seal the lid. Invert the jar, wrap it in a blanket, and allow it to cool to room temperature, so the jam can slowly set.
