Despite its natural tartness, the cherry plum in this recipe transforms into a wonderfully balanced sweet and sour jam. Thoroughly wash the cherry plums, removing the stems. Prepare a saucepan, sieve, bowl, clean cloth towel, a 0.5-liter jar with a canning lid, and a can seamer. Be sure to sterilize the jar and lid using any method convenient for you to ensure long-term storage of the jam.
Transfer the prepared cherry plums to a saucepan, add water, and place over medium heat. Wait until the water boils, then cook the cherry plums, stirring constantly, for 5-7 minutes until the fruit becomes soft and translucent.
Remove the pot from the heat, cover it, and let the cherry plums steep for 20 minutes. Then, carefully press the fruit through a sieve into a bowl, discarding the pits and skins. Transfer the resulting puree back into the pot.
Add sugar to the saucepan with the plum puree and mix thoroughly. Return the saucepan to low heat and bring the fruit mixture to a boil. Cook the jam for 15 minutes, stirring occasionally and skimming off any foam. Remove the saucepan from the heat and let the jam cool for 2-3 hours.
Re-boil the jam over low heat and simmer for 5-7 minutes. Cool again for 2-3 hours. For the final time, bring the jam to a boil, cook for 5-6 minutes, and immediately transfer it into a dry, sterilized jar.
Cover the jar with a lid and seal it tightly with a canning key. Invert the jar onto a clean cloth towel and allow it to cool completely at room temperature. Once cooled, store the jar of jam in a dark, cool place.
Serve this wonderful cherry plum jam with fragrant pancakes, fluffy fritters, or crispy toast generously spread with butter. Enjoy every bite!
