Start by preparing: thoroughly wash the peppers, carefully remove the stems and seeds. Peel and rinse the garlic, then dry the fresh herbs. These simple steps will provide a perfect foundation for your dish.
Slice the bell peppers into elegant half-rings or thin strips. For a more appetizing and colorful dish, choose peppers of different shades – this will enhance their visual appeal.
Mince the garlic by pressing it through a garlic press or grating it on a fine grater. Heat olive oil in a pan and sauté the garlic over medium heat for one minute to release its aroma.
Add the sliced bell pepper to the pan, season with salt and pepper to taste, then mix thoroughly. Cover the pan with a lid and reduce the heat to low. Simmer the vegetables for approximately 40 minutes, stirring occasionally to prevent sticking and ensure even cooking.
Separate the parsley leaves from the stems and chop them finely. Transfer the chopped parsley to a small bowl and add the capers.
Slice the olives into neat rings and add them to the bowl with the herbs and capers, creating an aromatic mixture.
