If your tomato harvest is too large, you don't have to limit yourself to just pickling them for winter. You can make excellent homemade ketchup from tomatoes, and it will taste just as good as store-bought, and certainly healthier and more natural. Besides tomatoes, you'll need onions, apples, bell peppers, and sugar. Choose apples of sour or sweet-and-sour varieties. Antonovka, Bely Naliv, Semerenko, Bessemyanka, or Idared would be good choices. The specified amount of ingredients yields two 1-liter jars.

Wash the tomatoes, apples, bell peppers, and onions. Peel the onions. Remove the stem and seeds from the bell peppers. Prepare a meat grinder, a fine sieve, a sterilized jar, and a lid.
Cut the apples into quarters. Remove the stems and seeds.
Dice the onion and bell pepper into arbitrary pieces. Halve or quarter the tomatoes depending on their size.
Pass all the chopped ingredients through a meat grinder.
Transfer the minced mixture to a saucepan or pot and place it on the stove. Simmer on low heat for 1 hour. Remove from heat and let cool.
Pass the mixture through a fine sieve. Add cinnamon, sugar, salt, and pepper. Mix thoroughly. Place over low heat and simmer for another 15 minutes.
Dissolve the starch in the vinegar. Pour this mixture into the tomato puree in a thin stream, stirring constantly. Simmer on the stove for another 10 minutes.
Immediately transfer the finished ketchup into sterile jars and seal the lids. Turn them upside down and allow them to cool completely. Afterward, store them in the refrigerator.
