Start by thoroughly washing the carrots, cucumber, and garlic. Then, carefully peel the vegetables.
Grate the cucumber on a special grater for Korean carrots to get beautiful thin strips. Then, drain it in a colander to remove all excess liquid, ensuring the salad isn't watery.
Now grate the carrots using the same Korean grater, so they perfectly match the cucumber. Transfer the grated carrots to a spacious salad bowl.
In a small bowl, combine the soy sauce, vinegar, and sunflower oil. Add sugar, salt, and pepper to taste. Mince the garlic and add it to the rest of the ingredients. Mix the dressing thoroughly until smooth.
Combine the prepared cucumber and carrots in a salad bowl. Drizzle the vegetables generously with the dressing and gently but thoroughly mix the salad. Cover the bowl with plastic wrap and refrigerate for half an hour to allow the flavors to meld harmoniously.
