Prepare the rice noodles according to the package instructions, then rinse with cold water and drain in a colander. Slice the chicken fillet into thin strips.
In a small bowl, combine the soy sauce, sesame oil, cornstarch, and 50 ml of water to make the sauce. Set it aside.
Heat the vegetable oil in a large skillet or wok over high heat. Sauté the chicken until golden brown and cooked through, about 5-7 minutes. Transfer the chicken to a plate.
Add the chopped onion, carrot, bell pepper, and cabbage to the same skillet. Sauté, stirring constantly, for 5–7 minutes until the vegetables are tender yet still slightly crisp. Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.
Put the chicken back into the pan with the vegetables. Add the cooked rice noodles. Give the sauce one more quick stir and pour it into the pan. Cook, stirring constantly, until the sauce thickens and evenly coats all the ingredients (about 2-3 minutes).
Serve immediately, garnished with chopped green onions (optional).
