This simple strawberry compote recipe has a chunky fruit syrup consistency and will liven up any yogurt, oatmeal, scone, or ice cream.

Serves:
strawberries - 4 cup
Vinegar - to taste
Salt - to taste
Sugar - to taste

Mix chopped strawberries, sugar, balsamic vinegar and salt in a saucepan; toss to coat evenly. Let stand until berries release juice, about 10 minutes.

Bring to a gentle boil over medium heat. Reduce heat to medium-low and cook, stirring occasionally, until strawberries are soft and compote has thickened, about 20 minutes. Remove from heat and let cool slightly; serve warm or chilled. Compote will thicken even more as it cools.

Reduce the sugar to 1/3 cup if you like something less sweet.
