Start by preparing the berries: carefully sort through the dogwood, removing anything unnecessary – twigs, debris, and spoiled fruits. Then rinse the berries under cool running water and gently dry them on a kitchen towel to get rid of excess moisture.
Prepare the jars for the compote: wash them thoroughly with soap or baking soda, and then sterilize them in any convenient way – in the microwave or over steam. Cleanliness is the key to successful preservation!
Fill sterilized jars with dogwood berries, distributing them approximately equally. Boil filtered water and carefully pour it over the berries in the jars, then cover with lids. Let it steep for 20 minutes to allow the berries to release their aroma and flavor.
Using a lid with holes, carefully drain the water from the jars back into the saucepan. Add sugar and bring to a boil. Cook the syrup for 5–7 minutes, until the sugar is completely dissolved, creating a sweet base for your compote.
Add 35 ml of lemon juice to each jar of dogwood. Carefully pour the prepared syrup into the jars so that it reaches the "shoulders", and immediately seal with sterilized lids to preserve the precious aroma and taste.
Turn the jars upside down, wrap them thoroughly in a blanket or quilt, and leave them in this position until they cool completely. Then transfer the compote to a dark, cool place for storage, where it can delight you with its taste throughout the winter.
