Prepare the dough. Heat the milk to 30–40°C. Dissolve yeast in it, add sugar and 2-3 tbsp. l. sifted flour. Stir and leave the dough in a warm place until the bubble cap rises.
Add vegetable oil and butter softened at room temperature to the dough, add salt and mix well. Gradually add sifted flour.
Knead the dough, adjusting the amount of flour added: the dough should be elastic and soft enough. Cover the bowl with the dough with a towel and leave to rise for 40 minutes in a warm place.
Punch down the dough, divide it into two equal parts, form two logs, place in a bowl, cover with a towel and let the dough rise again.
Form the koloboks into two flat cakes with thick edges and a thin center. To do this, take the cake with both hands, placing your thumbs in the middle. Holding the tortilla suspended, roll it between your fingers, pressing lightly in the middle with your thumbs. Then place the cake on a horizontal surface and slightly stretch it from the middle to the edges.
Let the cakes sit for another 15-20 minutes under the towel. Then apply the design in the middle, on the thin part. Traditionally, the cakes are decorated in the center with a pattern using a special tattoo. If you do not have such a device, you can apply the design with a regular fork.
Mix the yolk with 1 tbsp. l. water and brush the cakes on all sides with this mixture using a silicone brush. Sprinkle the center and edges with sesame seeds.
Preheat the oven to 220–230°C. Grease a baking sheet with vegetable oil. Carefully place the flatbreads on it and place in the oven for 12–15 minutes until golden brown.
