Pancakes made with ayran are loved by many people because they turn out thin, tender, and beautifully perforated. The latter quality is achieved due to the interaction between the acid in the dairy drink and baking soda. Very often, sugar is completely absent from the pancake batter recipe with ayran, but we decided to add it to enhance the color of the finished products, making them a more attractive golden-brown rather than a pale yellow. You shouldn't worry about them turning out too sweet. In this case, sugar just slightly harmonizes the flavor of the pancakes and, as mentioned earlier, "works" on the color.

Prepare dough for pancakes using ayran. Sift the flour into a large bowl along with salt and baking soda through a fine sieve. Add sugar and mix with a spoon.
Pour in ayran at room temperature or warmer, stirring constantly with a whisk. The pancake dough should be smooth, of uniform consistency, without lumps.
Cover the pancake dough on the ayran with a clean towel. Leave at room temperature for 30 minutes. During this time, gluten from the flour will develop in it, and the finished pancakes will turn out elastic and will not tear.
Place a frying pan over medium heat, preferably with a non-stick coating. Brush with vegetable oil using a pastry brush and heat well.
Pour a portion of pancake dough on ayran into a frying pan with oil, spread it carefully with the back of the ladle. Fry for 1-2 minutes until small holes appear.
Turn the pancake over with a spatula. Fry until browned on the other side. Remove the finished pancake with a spatula onto a plate. Grease the pan with vegetable oil again using a pastry brush.
In the same way, prepare pancakes from the remaining ayran dough. Place the finished pancakes in a stack, brushing them with butter, and keep them in a warm place. Serve hot.
