Pad Kaprao is a hot dish from Thai cuisine that is extremely popular among locals. It is prepared very simply: finely chopped meat or poultry is quickly fried in a pan, heated in a spicy sauce, and then green basil leaves are added to give the dish a refreshing spicy note. This hot dish is served with a fried egg. Why? Simply because the Thais believe it tastes better and is more filling that way! By the way, the Pad Kaprao recipe is so quick that you can try it out any time you like.

First, prepare the pad kapao sauce. Pour soy and oyster sauces into a bowl. Add brown sugar to them. Stir until completely dissolved.
Peel and chop the garlic for pad kapao. Wash the chili peppers and chop them finely (if you don’t mind the spicy taste, you don’t have to remove the seeds). Cut the chicken flesh into small cubes.
Heat 3 tablespoons vegetable oil in a large skillet. Add garlic and chili pepper. Stir-fry for one minute. Add chopped chicken. Fry, stirring, over medium heat for 7 minutes.
Pour the previously prepared sauce over the chicken with chili and garlic. Bring to a boil. Stirring, simmer the pad kapao over low heat for five minutes.
Using the remaining oil, cook three fried eggs. Add basil leaves to the pad kapao and stir quickly. Place on plates, top with fried eggs and serve.
