For apricot and cherry compote, sort through the fruits, removing those that are too soft or damaged. Wash the fruit by placing it in a bowl of cold water, then drain in a colander.
Cut the apricots in half and remove the pit. Also remove the pits from the cherries. You can also leave the fruit whole with seeds. Place the fruit in a sterilized jar.
Fill the fruit jar with boiling water to the very top and cover with a sterilized metal lid. Leave for 5 minutes, then carefully drain the water into the pan, leaving the fruit in the jar.
Place the pan on the fire, add sugar and bring to a boil and cook for 3 minutes. Carefully fill the jar of apricots and cherries with boiling syrup and immediately seal the jar with a lid.
Turn the jar upside down and place it on a folded towel. Cover well with a blanket and leave the apricot and cherry compote until it cools completely.
