Marinated capelin is an appetizing side dish to freshly boiled potatoes. Just the thought of it can make your mouth water. However, buying delicious marinated fish is quite a task. Sometimes there are preservatives in the mix, or it's too salty or too sweet, or the vinegar is overwhelming. To forever forget about such a dilemma, it’s worth learning to marinate fish at home, especially since it’s a quick and easy process. We offer a recipe for marinated capelin - a tasty, fatty fish rich in nutrients. Small capelin, like sprats, does not need to be cleaned before marinating. Whole fish with heads not only look beautiful but also marinate evenly, absorbing just the right amount of salt and spices.

Fresh frozen capelin - 500 g
Sea salt - 25 g
White wine vinegar - 50 ml
Sugar - 12 g
mustard seeds - 1 tsp

Thaw the capelin in advance and rinse with running water. Place the fish in a colander and let the water drain. If necessary, dry the capelin with paper towels.
Prepare the marinade. To do this, mix salt, sugar and spices in a small saucepan, add hot water, bring to a boil and simmer for 4-5 minutes. Remove from heat, pour in vinegar and cover the saucepan with a lid. Let the marinade cool to room temperature.
Peel the onion, cut it into quarter rings or strips (lengthwise, not across) - as you like. Without peeling the lemon, cut it with the zest into thin quarters of circles.
Place the capelin in a glass jar, evenly sprinkling the layers of fish with onions and lemon slices. Pour the cooled marinade over the fish along with the spices and close the jar with a lid.
Leave the jar of pickled capelin for two hours at room temperature, then put it in the refrigerator overnight or for a day. This fish can be stored in the refrigerator for a couple of weeks.
