Fried smelt – the perfect snack or hot dish. The meal is quick and very simple to prepare. It is incredibly delicious and will satisfy everyone. But only if you have very fresh fish. Here, freshness is the only and main criterion for taste.

Mix in a large plate - not deep, but not completely flat - about 1 cup of flour with salt and pepper to taste. There should be at least 1 tsp of salt, and in principle you don’t have to add pepper at all.
Place a large heavy-bottomed frying pan or two smaller frying pans over medium-high heat.
Place oil in the pan - there should be enough of it to create a layer at least 5 mm deep, preferably a little more.
While the oil is heating (and it should be pretty hot), dredge each fish in the flour mixture. Place the boned fish on the edge of the plate. If there is not enough flour, add more.
Place the fish in the hot oil, shaking off any excess flour to prevent it from burning in the oil, and fry for about 5 minutes, turning once. Serve immediately, with lemon if desired.
