Avar khinkal is a traditional dish of Dagestan cuisine that has gained popularity beyond the region due to its taste. It was named by one of the peoples inhabiting Dagestan - the Avars. Unlike Georgian khinkali, Avar khinkal is prepared using a different technique: small squares of dough for khinkal are boiled and served separately from the meat (usually lamb, beef, or chicken). Another feature of Avar khinkal is the exceptionally tender dough, kneaded with kefir. The dough for Avar khinkal according to this recipe turns out very fluffy because it is made with the addition of soda.

Mix flour with salt and soda, pour in kefir, knead into a homogeneous elastic dough. Cover with film and leave in a warm place for 30 minutes. Then knead again and leave for another 40 minutes.
Roll out the dough into a layer 3 cm thick, cut into diamonds with a side of 4 cm. Lay parchment on a baking sheet, place the diamonds, leave to proof for 1-2 hours (the dough should become crusty).
Remove excess fat from the meat, place in a saucepan, pour 2.5 liters of cold water. Bring to a boil, add salt, skim off the foam, add spices, cook uncovered over low heat until the meat is soft, 2 hours. Strain the broth, cut the meat into pieces convenient for eating.
Place the dough pieces into salted boiling water, stir, cover with a lid, bring to a boil, cook for 3 minutes. Do not open the lid! Quickly remove the finished khinkali from the boiling water (try to do it at the same time), pierce each khinkal in the middle with a toothpick, and brush with vegetable oil.
Place the khinkal on plates, place the meat next to it, pour the hot broth into bowls, and serve immediately.
