Lenten pancakes on mineral water are prepared very quickly and simply: the batter consists of only 5 ingredients, including salt and sugar. And if you still believe that nothing can turn out without eggs, our recipe will completely debunk this common misconception. So, we mix mineral water, salt, and sugar, add vegetable oil, flour, and... start frying! How quickly these lovely thin pancakes reach the table depends solely on your culinary skills. Serves:
Flour - 250 g
Mineral water with gas - 500 ml
Vegetable oil - 2 tbsp
Sugar - 3 tsp
Salt - to taste

Prepare the pancake dough. Pour sparkling mineral water into a large bowl. Add salt and sugar. Stir with a whisk until they are completely dissolved.

Add vegetable oil. Stir again. Sift the flour into a separate bowl. Then gradually add it to the liquid ingredients of the pancake batter, constantly stirring with a whisk so that there are no lumps.

Cover the bowl with the dough and leave it under a towel for about ten minutes. During this time, prepare a frying pan with a thick bottom and low sides and a plate in which you will place the finished pancakes.

Place the pan over medium heat and heat well. Brush with vegetable oil using a pastry brush. Pour a little batter and brown the pancake on one side (the top should “set”).

Flip the pancake and fry the other side (30-40 seconds). Transfer to a plate and brush with a little oil. From the remaining dough, prepare pancakes according to the same procedure. Place the finished ones in a stack, brushing them with oil, and keep them in a warm place until serving.
