Pancakes on sourdough are a true classic of the genre: this is how our grandmothers and great-grandmothers prepared them, especially if it was about any important occasion. It could be joyful (Maslenitsa) or sad (funeral), but in any case there should have been a pile of just such pancakes on the table, fluffy, with beautiful holes. The dough is prepared for a long time and solemnly: first, the dough is kneaded, which must be allowed to rise, then milk, flour and other ingredients are added, except egg whites. After which there is a process of long proofing, during which the risen mass is lowered several times. Serves:
Flour - 500 g
Milk - 400 ml
Fresh yeast - 20 g
Egg whites - 2 pc
Egg yolk - 3 pc
Sugar - 1 tbsp
Salt - 0.3 tsp
Vegetable oil for frying - to taste
Melted butter for greasing pancakes - to taste

Prepare the pancake batter. Crumble the yeast. In a large saucepan, heat 250 ml water to 36 °C. Dissolve the yeast in it. Leave for 15 minutes. Then, stirring, add half the flour. Leave the dough in a warm place for 1 hour.

Place the egg yolks in a bowl, add sugar and salt. Mash with a spoon. Melt the butter and let cool slightly. Add it to the dough along with the yolk mixture. Stir.

Then gradually, stirring constantly so that no lumps form, add the remaining flour. The pancake batter should be quite thick, and that's okay.

Dilute the dough with warm milk (36 °C), constantly stirring with a spatula or large whisk. The dough should have the consistency of liquid sour cream. Cover it with a towel and leave in a warm place for 1 hour.

Stir the pancake batter until it settles and let rise again for an hour. So repeat one more time. Beat the whites into a thick foam. Add to the pancake batter and let it rise again (do not stir any more).

After this, you can start baking pancakes. Do this in a well-heated frying pan, each time greasing it with vegetable oil using a brush. Stack the finished ones and grease them with butter. Before serving the pancakes on the table, keep them in a warm place.
