Peel the potatoes, cut into 4 pieces and place in a saucepan. Pour in water, add salt and cook covered over medium heat for 20 minutes. During this time, the potatoes will be cooked until soft.
Drain the water; it won't be needed. Mash the potatoes directly in the pan with a masher. Be sure to ensure smooth puree.
Cut the onion into small cubes. Melt the butter in a frying pan over medium heat. Add the onion and cook, stirring frequently, until the onion is lightly browned. Remove the pan from the heat.
Place the onion in the pan with the mashed potatoes along with the oil from the frying pan. Add hot chicken broth in small batches, stirring thoroughly after each addition. It is important to achieve a uniform structure.
Bring the soup to a boil. Pour in the cream and season with ground black pepper. Let the soup simmer for literally another 1 minute, then pour into bowls and serve immediately.
