Semolina porridge with egg and onion is not at all like the sweet semolina that is usually served for children's breakfast. This completely unusual, one might even say, gourmet dish is even prepared using a different technology: the cereal must first be fried. After which the fried semolina porridge is poured with milk or broth, boiled, caramelized onions and a poached egg are added to it. This semolina porridge is suitable not only for a hearty breakfast. It can be prepared for the whole family for lunch or dinner. If desired, you can add your favorite herbs or spices to the dish for aroma and a more refined taste.

For the caramelized onions, peel and thinly slice the onion. In a frying pan over medium heat, heat a mixture of olive oil and 2 tbsp. l. butter, add onion, salt, sprinkle with sugar. Cook until caramel-colored, stirring occasionally, about 15 minutes.
Pour semolina into the bottom of a non-stick pan or saucepan. Place over low heat and cook, stirring, until the semolina turns dark beige. Don't let it burn!
Pour warm milk or broth over the fried semolina. Cook, stirring to avoid lumps, until desired thickness, 3–5 minutes. Remove from heat, add 2 tbsp. l. butter, stir, close the lid and let it brew.
For poaching, grease the center of 2 pieces of film measuring approximately 30x30 cm with butter and salt. Place the film in a cup, oil side up, carefully break 1 egg onto each piece of film, lift the ends, twist, removing air, and tie a knot.
Bring water in a small saucepan to a minimum boil, lower the eggs in film, and leave to simmer over low heat for 4-5 minutes.
Place the porridge in bowls, top with a heaping spoonful of caramelized onions and a poached egg. Serve immediately.
