How to cook ramen soup with chicken at home? Prepare all the ingredients for the soup. If you have frozen chicken, take it out of the freezer beforehand and thaw it. This time I used two small chicken thighs at the rate of one bone per serving. Wash the eggs, hard-boil them and peel them.
Wash the chicken, remove the remaining feathers, if any. Put the meat in a saucepan, cover with cold water and place on the stove. Bring to a boil over high heat.
At this time, peel the carrot, onion and garlic. Wash the vegetables.
Carefully remove the foam that has formed in the pan. Put the carrots and onions in the broth, reduce the flame to moderate. Cook the chicken until done under a half-closed lid. It took me about 30-35 minutes.
Remove the finished meat from the pan, strain the broth. Cut the slightly cooled chicken into small pieces.
Pour soy sauce into the chicken broth, add chopped garlic, allspice, ginger powder and chili pepper. Stir and taste for salt. If necessary, add salt to taste. Return the pan to the stove and leave it to warm up on the lowest heat.
Boil the noodles in a separate pan.
Take a deep plate. Place the boiled noodles closer to one edge, as in the photo.
Put the pieces of chicken on the second half.
Cut the egg in half and send it to a plate. At this stage, you can add fresh soybean sprouts. I used pickled vegetables for Asian soups.
Pour in the hot broth.
Sprinkle with sesame seeds and finely chopped green onions.
