Have you ever made pies with pickles? If not, we highly recommend checking out our detailed step-by-step recipe. The dough is ordinary yeast dough, which, however, does not take too long to prepare. But the filling deserves special attention. It consists of onions, which are first fried and then stewed with pickles. Of course, the tastier they are, the better the result will be. You can add some chopped ham. Then we make pies, bake them in the oven and... we gain a new gastronomic experience, which in our opinion is very interesting!

Serves:
Flour - 400 g
Milk - 150 ml
Butter 82.5% - 75 g
Eggs - 3 pc
Dry yeast - 6 g
Sugar - 2 tbsp
Onion - 1 pc
Salted cucumbers - 3 pc
Vegetable oil - 2 tbsp
Salt - to taste

Prepare the dough for the pies. Heat the milk in a saucepan to 35 °C. Sift the flour along with a pinch of salt. Dissolve dry yeast in milk. Add all the sugar and half the sifted flour.

Using a whisk (or mixer at low speed), knead the dough. Cover it with cling film and leave in a warm place for 1.5-2 hours. The dough should double in volume. Melt the butter.

Add 2 eggs, butter and the remaining flour to the risen dough. Knead until the pie dough is smooth, elastic and begins to pull away easily from the sides of the pan. Cover again with cling film and leave in a warm place for 1–1.5 hours.

Place the dough on a floured work surface and knead. Form it into a thick sausage. Divide into pieces and roll each into a ball. Place them on the work table, cover with a towel and leave for 15 minutes.

Prepare the filling for the pies. Peel and chop the onion. Fry in a frying pan in vegetable oil until golden brown. Grate the pickled cucumbers on a coarse grater. Add to the onion and stir. Simmer over medium heat, stirring occasionally, until all the liquid has evaporated. Remove from heat and let cool.

Preheat the oven to 200°C. On a floured work surface, roll out the dough balls into 3mm thick rounds. Place a little filling in the middle of each. Bring the edges of the cakes together and pinch. Place dough pieces on a baking sheet. Cover with a towel and leave for 15 minutes. Then brush with the remaining egg. Bake for 20–25 minutes.
