Tsvikli is a Ukrainian Easter snack made from beets and horseradish. It is traditionally served with meat dishes for Easter and Christmas. The spicy and aromatic snack perfectly complements the taste of homemade baked ham, sausage, aspic, baked duck or chicken. Tsvikli is quick and easy to prepare, you just need to prepare the beets in advance. Vegetables can be boiled until cooked or baked in foil in the oven. I like the latter option more, baked beets are more juicy and healthy. The spiciness of tsvikli can be adjusted to your taste by adding more or less hot horseradish.

Wash the beets, wrap them in foil, transfer them to a heat-resistant form. Bake the vegetables in an oven preheated to 180 degrees for 40-60 minutes, depending on the size of the root vegetables. You can also boil the beets until done.
Cool the vegetables to room temperature, peel them, and grate them finely.
Leave the vegetables at room temperature for 30 minutes to release their juices. Then, strain the grated vegetables through a fine-mesh sieve to remove excess juice.
Wash the horseradish root thoroughly and peel off the dark skin.
Add the horseradish pieces to the chopper bowl.
Grate the ingredients into shavings using a blender or a small grater.
Add grated horseradish to the grated vegetables. Adjust the proportion of horseradish to beets to your taste. Instead of fresh root, you can use canned horseradish without additives.
Add salt and sugar (can be replaced with honey).
Pour in lemon juice or the same amount of 6% apple cider vinegar.
Thoroughly mix the ingredients until a smooth consistency is achieved.
Transfer the appetizer to a glass container, seal tightly with a lid. Place the ćwikła in the refrigerator for 2 hours to allow the appetizer to infuse.
Serve bright, sharp beet horseradish relish with your favorite meat dishes. Store the finished appetizer in the refrigerator in a closed container for up to 3 days.
