Cauliflower casserole with tomatoes and a cheese crust is a delicious, light, and simply indispensable dish for lunch or dinner. This casserole is a family favorite in any season, as it can be prepared using both fresh and frozen cauliflower. A delicate cream and egg filling envelops the cauliflower florets, emphasizing its softness and lightness, while the grated cheese topping gives the dish a golden crust.

Tomatoes - 2 pcs.
Hard cheese - 100 g
Chicken eggs C1 - 2 pcs.
Cream 20% fat - 200 ml
Olive oil for lubrication - 20 ml
Ground turmeric - ½ tsp.
Dried Italian herbs - ½ tsp.
Ground black pepper - ⅕ tsp.
Salt - ½ tsp.
Allspice - 3 pcs.
Bay leaf - 1 pcs.
Fresh parsley - ⅕ bunch

Separate the cauliflower into small florets.
Bring water to a boil in a saucepan. Add salt, allspice, and bay leaf for aroma, ground turmeric for a beautiful golden hue. Carefully lower the cauliflower florets into the boiling water. Cook the vegetables for 3 minutes. Transfer the cauliflower to a colander to drain, cool the vegetables to room temperature.
Meanwhile, prepare the filling. In a deep bowl, combine medium-fat cream, chicken eggs, salt, and spices to taste.
Whisk the ingredients until smooth.
Wash small tomatoes, cut into thin half-rings. Grate hard cheese on a grater with a large blade.
Grease individual baking dishes with olive oil. Place blanched cauliflower in them. If desired, the casserole can be made in one large dish, in which case the cooking time should be increased to 30-35 minutes.
Pour 2/3 of the cream and egg mixture over the vegetables. During cooking, the beaten eggs will increase in volume and completely cover the cauliflower florets.
Put tomato half-rings on top.
Garnish the casserole with grated hard cheese.
Place the molds with the casserole on a baking sheet, and send them to an oven preheated to 180 degrees for 15-20 minutes.
When the creamy egg filling is fully baked and the cheese on top is melted, the casserole will be ready. Garnish the tender cauliflower casserole with parsley and serve immediately after cooking.
If desired, you can add pieces of chicken fillet or ham to the casserole. This will make the dish even more nutritious. Enjoy!
