Beef liver with gravy is a dish familiar to everyone since childhood, tasty, easy to prepare and at the same time very healthy. In this recipe, we will tell you how to make beef liver in a frying pan without much effort. This product goes well with a delicate sour cream sauce, because sour cream or cream makes the liver juicy and very soft. If these ingredients are used, the healthy offal does not even need to be pre-soaked before cooking - the dish will turn out delicious anyway! Most importantly, do not forget an important point: beef liver does not require prolonged heat treatment.

Preparation Steps

Step 1

Cut the prepared beef liver into small oblong pieces. Make sure that there are no films or veins left on the product - this will make the liver especially soft.

Cut the onions into thin half rings or feathers. Heat vegetable oil in a thick-bottomed frying pan and fry the onion over medium heat until translucent.

Add the liver to the pan with the onions and continue to fry the ingredients over medium heat. Remember to stir the food periodically to prevent it from burning.

In a bowl, mix sour cream at room temperature and 150 ml. hot water. Add salt and ground black pepper to the mixture and mix all the products thoroughly.

Pour the resulting sauce into the frying pan, mix the sauce with the rest of the ingredients and reduce the heat to low. Cover the pan with a lid and simmer the dish for 15-20 minutes.

Mix wheat flour thoroughly with 50 ml. cold water so that there are no lumps left, and slowly pour the flour mixture into the frying pan with the liver and sour cream sauce, stirring constantly.

Without covering the frying pan with a lid, bring the dish to a boil, then reduce the heat to low again and simmer the liver with the sauce for about 3-5 minutes, until the sauce reaches the desired consistency.

Finely chop the parsley leaves and stems and add to the pan with the liver. Stir the dish well, let it simmer for another minute or two and turn off the heat.

Cover the frying pan with the liver with a lid and let the dish steep for another 10-15 minutes, during which time the juices and flavors of all its constituent products will be evenly distributed in it.

Serve stewed beef liver with gravy in deep plates, with a side dish of mashed potatoes, boiled fluffy rice, buckwheat or pasta. You can garnish with fresh parsley or cilantro leaves.
