Churchkhela (Georgian: ჩურჩხელა) - traditional Georgian cuisine - candle-shaped candy. The main ingredients are grape must, nuts and flour. Almonds, walnuts, hazelnuts, chocolate and sometimes raisins are strung on a string, dipped in condensed grape juice or fruit juices and dried into sausage shapes. In traditional technology, churchkhela in Kakheti was included in the list of intangible cultural heritage of Georgia in 2015. Pelamushi (Georgian: ფელამუში) or tatara is a dish of Georgian cuisine, a thick, hard chilled jelly made from grape juice and flour. Pelamushi is usually served with peeled nuts or kozinaki.

We pour good quality pomegranate (1.5 l) and orange (1.5 l) juices, purchased at the store, into different containers. Place on low heat.
Pour the sifted flour into a third of the warm juice and stir thoroughly so that no lumps remain. Pour the mixture of juices and flour in a thin stream into containers with juices, stir. I simmered for one hour, stirring continuously until the flour was completely cooked and left no taste or smell. The consistency should be thick, like honey.
Dip the nuts strung on strong threads into the resulting mixtures, dip them thoroughly, take them out and hang them in any warm place.
The slightly set Churchkhela can be dipped into the mixture again and hung. Churchkhela in limbo will cook for at least three days, or even longer. You can speed up the process and dry it in the oven.
Grind the nuts into the remaining mixture, mix thoroughly and put into molds. The result was Pelamushi. This is delicious! Bon appetit!!!
