Semolina makes delicious porridge. It is also very good in baking – it makes it porous and airy. Pie with semolina and berries can feed a child and delight guests. The recipe was created for those who like hassle-free baking: just mix all the ingredients and bake until golden brown. You can add seasonal berries to the pie. For example, black or red currants, as well as lingonberries or cranberries. They go well with sweet dough. A nice bonus is the vitamin boost they will give to the body. Prepare all the ingredients for the pie with semolina and berries. Combine the cereal and kefir in a bowl and leave for 30 minutes to allow the semolina to swell.
Break the eggs into a bowl and beat them with a mixer or blender with sugar and vanilla sugar into a fluffy light foam. Then add them to semolina and kefir, mix.
Sift the flour through a sieve along with baking powder to enrich it with oxygen. In portions, stirring after each, pour into the egg-kefir mixture and knead into a homogeneous dough. Pour in vegetable oil and stir again.
Rinse the blackcurrants thoroughly and dry on a towel. Add the berries to the dough and stir until they are evenly distributed. Be careful not to damage the berries.
Preheat the oven to 180˚C. Grease a baking dish with butter and sprinkle with flour. Pour in the dough and bake until done (about 40-50 minutes).
Cool the finished pie slightly in the pan (literally 5 minutes), then remove and cool on a wire rack. Sprinkle with powdered sugar and serve, cut into portions.
