Capelin baked in the oven is an example of one of the many dishes that can be prepared from this small and remote fish. It is not only very tasty, but also extremely healthy. This wild fish is superior to meat in terms of vitamin B and selenium content. It definitely needs to be included in your diet. In our recipe we do not use breading, so the fish turns out to be less caloric. Capelin is often ignored due to the fact that there is a lot of fuss with small fish, but in fact this is not the case at all. Many people prefer not to clean capelin at all. We guarantee that even for “purists” cleaning will take a minimum of time.

Vegetable oil - 2 tbsp
Salt - 1 tsp

Thaw the capelin in the refrigerator, remove the insides by scraping out the black film. You can leave the heads. Rinse the fish in cold running water and dry with paper towels.
Place the capelin in a bowl and sprinkle with salt and black pepper, add lemon juice and vegetable oil, stir and let stand for 10 minutes. During this time, stir the fish a couple more times with your hands.
Preheat oven to 200°C. Cover a baking sheet with parchment paper and place the capelin on it in neat rows in one layer. Bake the fish for 15–20 minutes.
For the sauce, finely chop the dill and green onions. Mix sour cream, onion, dill, salt, pepper and lemon juice. Place capelin on a plate and serve sour cream sauce separately.
