From unripe tomatoes, you can make an excellent appetizer that is not inferior in taste to the classic options with eggplants and zucchini. One of the most popular dishes made from green tomatoes is caviar. This wonderful appetizer will decorate any table and captivate you with its taste and aroma. It pairs perfectly with bread, lavash, meat dishes, and fish. Green tomato caviar is quite simple to prepare and turns out incredibly aromatic, juicy, moderately spicy, and piquant.

Serves:
Green tomato - 1 kg
Sweet pepper - 500 g
Hot chilli pepper - 1 pc
Onion - 250 g
Carrot - 250 g
Tomato sauce - 30 g
Vegetable oil - 75 ml
Sugar - 1 tbsp
Salt - 1 tsp
Khmeli-suneli seasoning - 1 tsp
Ground black pepper - ½ tsp
Greens (dill and parsley) - 1 bunch

Peel the onion, chop it into small cubes.

Place the vegetables in a deep pan with preheated oil. Stirring, fry the onions until golden on medium heat.

Wash the carrots, peel them, and grate them on a coarse grater.

Add grated carrots to the onions, stir. Continue frying the vegetables together for 3-5 minutes.

Wash the sweet pepper, remove the seeds, and cut into small cubes.

Add sweet pepper to the onions and carrots. Stirring, sauté the vegetables until soft.

Wash the green and brown tomatoes, cut them in half, remove the stem, and dice the vegetables into small cubes.

Add the tomatoes together with the juice to the rest of the ingredients. Stirring, stew the green tomato caviar over medium heat without a lid. After 20-25 minutes, the excess juice will evaporate, and the caviar will become quite thick.

Wash the hot pepper, cut it in half, remove the seeds, and chop it into small cubes. Add the hot pepper to the green tomato caviar. You can adjust the amount of hot pepper to your taste or not add it at all.

For a spicy note, add tomato sauce to the vegetables.

Salt the caviar to taste, season with ground spices, add sugar. Stir and continue to stew the caviar over low heat without a lid for another 5 minutes.

At the end of cooking, add finely chopped dill and parsley.

Serve the prepared green tomato caviar warm or chilled on slices of fresh bread as an appetizer or as a side dish to the main course.
