A puff pastry pie with omelet and mushrooms according to this recipe can be prepared even by a novice hostess. Using ready-made dough significantly reduces cooking time. The combination of crispy puff pastry with a tender and juicy filling makes this pastry incredibly delicious. A fluffy and airy omelet with mushrooms and green onions perfectly complements the thin pastry. Minimal ingredients and excellent results!

Puff pastry without yeast should be taken out of the freezer in advance to defrost and become elastic.
Wash the green onions, cut them into thin rings, and place them in a pan with preheated oil. Stirring, fry the onions for 1 minute.
Wash the fresh mushrooms, chop them into small cubes, and add them to the green onions. Stir and continue to fry the ingredients until the mushrooms are cooked.
In a deep bowl, mix 5 chicken eggs, milk, salt, and ground spices. Separate the remaining chicken egg into white and yolk. Add the white to the omelet, leave the yolk for greasing the pie. Beat the eggs with milk and spices until smooth.
Pour the egg mixture into the pan with onions and mushrooms.
Constantly stirring, cook the omelet over medium heat for 3-4 minutes. The omelet should turn out "flaky".
Roll out the puff pastry dough into a rectangular sheet 3-4 mm thick and measuring 30x20 cm.
Visually divide the dough crosswise into 3 parts. Without reaching the central part, make parallel cuts from two opposite edges of the blank at a distance of 2 cm. Place the omelet with mushroom filling in the center of the blank.
Alternately fold the strips of dough over the filling from different sides to form a pie.
Carefully transfer it to a baking sheet lined with parchment. Use a silicone brush to coat the pie with chicken egg yolk.
Send the baking sheet with the pie to the oven preheated to 180 degrees for 25-30 minutes.
When the pastry is golden brown, carefully remove it from the oven and slightly cool it on a rack.
Cut the aromatic puff pastry pie with omelet and mushrooms into serving pieces and serve warm.
