Preheat your oven to 160°C, preparing a cake tin by lining it with parchment paper so that the edges of the paper protrude beyond the walls of the tin. This will allow you to easily remove the finished cake.
In a bowl, sift together the flour, baking powder, and salt to enrich the mixture with air and avoid lumps. Zest the orange using a fine grater and squeeze out the juice, filling the kitchen with a citrus aroma.
In a large bowl, combine yogurt, eggs, sugar, orange zest, vegetable oil, and vanilla extract, creating the base for the tender dough. Add a cup of cranberries, gently stirring to distribute the berries evenly. Pour in the flour mixture, quickly knead the dough, and carefully transfer it to the mold. Top with the remaining cranberries.
Place the mold in a preheated oven and bake for 45-55 minutes. To check the cake's readiness, insert a toothpick into it: if it comes out dry, then the cake is ready.
Let the finished cake rest, gently removing it from the mold by the edges of the parchment, and leave it to cool on a wire rack.
Prepare the glaze by mixing powdered sugar with cream, achieving the desired consistency. Drizzle it over the cooled cake to give it an elegant look.
