To create these incredible fresh spinach pancakes, you will need simple but high-quality ingredients: juicy spinach, fragrant parsley, fresh sorrel, a little onion, garlic, flour, eggs, savory hard cheese, salt, and a little vegetable oil.
Greens, such as spinach, sorrel, and parsley, should be thoroughly rinsed under running water to remove all impurities. Then gently pat them dry to get rid of excess moisture and carefully sort through them, removing any weeds or unwanted elements. Finely chop the spinach and sorrel leaves so that they are evenly distributed in the batter. For parsley, separate the delicate leaves from the tough stems, using only the soft part to add flavor to your pancakes.
Place the prepared greens in a blender, add the fragrant chopped onion and peeled garlic clove. Add salt and pour in a little vegetable oil to soften. Grind all ingredients until smooth, then transfer this magical mixture to a convenient bowl.
Whisk the eggs and pour into the bowl with the green mixture to enrich the dough. Grate hard cheese on a fine grater and add to the green mixture to give the pancakes a savory flavor and appetizing texture. Add flour and gently stir the dough with a whisk to avoid lumps and achieve the perfect consistency.
