Preheat the oven to 200 °C and prepare the eggplants: transform them by piercing them with a knife on all sides, spread them on a baking sheet covered with parchment paper, and bake until they become soft and pliable (about 30 minutes).
Prepare homemade tahini: unlock the sesame aroma by lightly roasting it in a dry pan, stirring for 1.5 minutes. Transfer it to a blender, add olive oil, lemon juice, garlic, cumin, salt, and pepper. Create a magical paste by grinding all the ingredients together.
Extract the essence of flavor from baked eggplants: cut them lengthwise in half and carefully scoop out the pulp with a spoon. Chop it with a knife, place it in a sieve, and let the excess liquid drain for 30 minutes.
Mix all ingredients together: combine the eggplant pulp with tahini and season with salt and pepper to taste. Let the dip sit in the refrigerator for 1 hour so that all the flavors fully develop.
