Carefully sort the beans, making sure to remove any damaged ones. For quality pods, carefully trim the ends on both sides. In a saucepan holding at least 2 liters, bring water to a boil and add a pinch of salt. Lower the prepared beans into the boiling water and cook for 5 minutes after boiling again to maintain their crisp texture.
Prepare a deep bowl, filling it with ice water and adding ice cubes for maximum cooling. Drain the cooked beans in a sieve, then immediately transfer them to the bowl with ice water to stop the cooking process. Leave the beans in the ice water for 5 minutes, then drain them again in a sieve to remove excess water.
Peel the garlic cloves and lightly crush each one with the flat side of a knife to release the aroma. Then finely chop the garlic. Combine it with the chilled green beans, gently stirring to evenly distribute the garlic flavor.
Prepare 0.5 l jars by thoroughly washing them with a degreasing agent. Sterilize the jars using any method convenient for you to ensure the safety of the preservation. After sterilization, turn the jars upside down on a clean towel and let them dry completely.
Close the cooled jars of pickled beans with plastic lids (do not seal). After that, put the beans in the refrigerator for a day for complete pickling. After this time, the pickled beans are ready to serve, delighting with their spicy taste.
Pickled beans keep perfectly in the refrigerator for several days, allowing you to enjoy them gradually. Over time, their taste only becomes richer and deeper. Before serving, if desired, drizzle the beans with fragrant vegetable oil for an extra flavor accent.
Prepare a fragrant marinade for the beans, which will become the basis of the flavor. In a small saucepan, combine one liter of drinking water with vegetable oil, sugar, salt, bay leaf, black and allspice peppercorns, cloves, and mustard seeds. Bring the mixture to a boil and cook for 2 minutes to allow all the flavors to develop.
Pour the table vinegar into the boiling marinade, and then immediately remove the saucepan from the heat to preserve the aroma and avoid excessive acidity. Arrange the prepared beans in sterilized jars, trying to distribute them evenly. Carefully pour the hot marinade over the beans, ensuring full coverage. Cover the jars with lids and let them cool completely at room temperature.
