Start by preparing the batter for your future airy syrniki. Rub the cottage cheese through a fine sieve to give it incredible tenderness. Carefully separate the eggs into yolks and whites, and put the whites in the refrigerator for now.
Yolks whisk with sugar until light and airy. Add the whipped yolks to the mashed cottage cheese and mix thoroughly. Then add the semolina, mix again and let the dough stand at room temperature for 10–15 minutes.
Get ready for magic! Beat the chilled egg whites with a mixer until soft peaks form. Without stopping the beating, gradually add salt and vanilla sugar. Continue beating until you get a smooth and homogeneous mass, resembling a cloud.
Gently combine the whipped egg whites with the cottage cheese mixture, trying to maintain lightness and airiness. Sprinkle enough flour on the table. Place the dough in portions, one tablespoon at a time, directly into the flour.
Form the syrniki and roll them in flour on all sides. Heat a small amount of vegetable oil in a large skillet. Place some of the syrniki in the skillet and brown them on one side until golden brown.
Turn the syrniki over and fry them on the other side until golden brown. Repeat the process with the remaining syrniki. Serve the finished, fluffy syrniki hot, with sour cream, condensed milk, or jam to your liking. Enjoy!
