Georgian bean soup with vegetables and rice is a vivid culinary reflection of the richness of Georgian cuisine. Thanks to the beans, the dish is incredibly hearty and warming. Start by soaking the beans in cold water for 8–10 hours to soften them. Then drain the water, rinse the beans thoroughly, and cover them with fresh water (2 liters). Bring to a boil over high heat, remembering to skim off the foam. After boiling, reduce heat and cook the beans until they are soft enough – this will take approximately 1–1.5 hours.
Take a handful of overcooked beans and mash them with a fork until they form a puree. Return the puree back to the pot to give the soup a creamy texture. Rinse the rice under running water and add it to the pot with the beans. Cook until the rice is completely boiled, about 20–25 minutes, stirring occasionally.
Finely chop the onion. Peel and coarsely grate the carrots. Fry the onion in ghee until golden brown, then add the carrots and simmer over low heat for about 5 minutes, stirring. Remove the skin from the tomato and grate it. Add the grated tomato to the pan with the vegetables and simmer for another 5 minutes.
Add the stewed vegetables to the soup and cook for another 10 minutes to allow the flavors to meld. Finely chop parsley and cilantro, add the herbs to the soup, and stir.
Clean the garlic and mash it in a mortar with salt. Add the mashed garlic to the soup along with the bay leaf and adjika to taste. Bring the soup to a boil and simmer over low heat for another 5 minutes. Serve the soup hot, enjoying the rich taste and aroma.
