Transform your zucchini without peeling them: cut them lengthwise into quarters, then slice them crosswise into appetizing pieces 2.5-3 cm thick.
Prepare an aromatic mixture: crush, peel, and finely chop the garlic. Then, finely chop the parsley leaves and mix them with the garlic. Cut the tomatoes into medium-sized cubes to add juiciness.
In a saucepan, melt the ghee. Quickly fry the zucchini over high heat until golden brown, sprinkle with flour, salt, and pepper, continue to fry for a little longer to release all the aromas.
The final touch: pour sour cream over the zucchini, reduce the heat to medium, stir gently and bring to a boil. Add tomatoes and parsley with garlic, heat through, remove from heat, and your dish is ready to serve!
