If you're avoiding sugar in your diet, that doesn't mean you have to give up your favorite sweet syrniki! They're easy to make by replacing sugar with natural honey. For perfect syrniki, crumbly farmer's cheese works best, while fat-free or pre-packaged cheese curds won't give you the right consistency. First, sift the flour to ensure your syrniki are light and airy. Then, thoroughly wash and dry the chicken eggs. If your honey has slightly crystallized, you can easily melt it using any convenient method, such as a double boiler or microwave.
Place the cottage cheese in a deep bowl and mash it thoroughly with a fork. Then, add the chicken eggs, ensuring they are well combined with the cottage cheese.

Add the sifted flour, salt, and baking powder to the cottage cheese mixture. Pour in the prepared liquid honey. Now, thoroughly mix all ingredients until you achieve a smooth and uniform dough.

Shape the curd dough into neat cheese pancakes. Heat the butter in a frying pan. Fry the cheese pancakes on both sides for 5-7 minutes until they turn an appetizing golden color.

Serve the syrniki for breakfast, topping each portion with a spoonful of fresh sour cream for an even more delicate flavor. Enjoy your meal!
