Thoroughly wash the berries, removing all stems and tails. Prepare your mixer and baking dish to begin creating this wonderful pie.
Crack the eggs into a deep bowl and add the sugar. Whisk the mixture, gradually increasing the mixer speed, until it becomes light in color and significantly increases in volume, transforming into a fluffy base for the cake.
Combine the flour with the baking powder. Carefully, in small portions, add the flour mixture to the egg mixture, stirring thoroughly each time. Your dough should have a consistency resembling thick sour cream, perfect for a delicate pie.
Preheat the oven to 180°C. Grease a baking dish with butter and sprinkle with semolina to prevent the cake from sticking. Carefully pour the batter into the prepared dish, creating the base for your culinary masterpiece.
Spread the fresh currants evenly over the dough. Place the form in a preheated oven for 30 minutes. Once the pie is ready, allow it to cool completely before carefully removing it from the pan to preserve its perfect structure.
Before serving, generously dust the pie with powdered sugar, garnish with fresh mint and extra berries. These can be not only black or red currants, but also juicy raspberries or fragrant blackberries, to give the dessert even more charm.
