These incredibly soft and appetizing caramel-filled cupcakes will be a real hit at any children's party, easily replacing a traditional cake. Their moist and crumbly texture simply melts in your mouth, and the secret to the amazing filling is simple: instead of complex caramel, just place one creamy toffee in each cupcake. First, take all the necessary ingredients out of the refrigerator so they can reach room temperature. This will help the dough mix better and rise in the oven. Then, sift the flour and prepare two large bowls, a mixer, a whisk, and a muffin tin.
In one bowl, combine the sifted flour with baking powder, creating the base for your dough.
Now, add a pinch of salt, vanilla sugar for aroma, and regular sugar to the bowl with the flour. Thoroughly mix all the dry ingredients to ensure they are evenly distributed.
In a separate bowl, whisk the chicken eggs with a mixer until lightly frothy, giving them an airy consistency.
Pour vegetable oil and kefir into the beaten eggs. Whisk all the liquid ingredients thoroughly until smooth.
Carefully combine the dry and liquid components of the dough. Mix them thoroughly until no lumps remain and the batter is smooth.
Cover the prepared dough with plastic wrap and let it rest for 20 minutes at room temperature to gain strength.
Fill the muffin cups about one-third full with batter, leaving space for the filling and for the muffins to rise.
Place one toffee in the center of each dough-filled mold; it will transform into a delightful caramel filling.
Evenly spread the remaining batter over the top, completely covering the toffee. Place the muffins in the oven, preheated to 180°C, and bake for 20 minutes until golden brown.
Once the muffins have cooled, garnish them with powdered sugar, grated caramel, and a fresh sprig of mint for an elegant touch. Serve these wonderful muffins with a hot cup of tea, savoring every bite.
