Begin by preparing: thoroughly wash and peel the carrots. Make sure you have a blender, coffee grinder, and plastic wrap on hand.
Process the walnuts in a blender until coarsely chopped, leaving some larger pieces for texture.
Similarly, crush the cookies in a blender to create crumbs roughly the same size as the nuts.
Combine the regular and vanilla sugar, then grind them in a coffee grinder until they reach a powdered sugar consistency.
Grate the carrots finely to achieve a smooth consistency.
Melt the butter in a pan over low heat. Add the grated carrots and simmer, covered, until completely soft.
Remove the pan from the heat. Add the powdered sugar to the carrot mixture and mix thoroughly. Let the carrots cool slightly.
Add the crushed nuts and cookies to the carrot mixture. Mix well to ensure all ingredients are evenly distributed.
Place the resulting mixture onto plastic wrap and form it into a log. Wrap tightly with the film and refrigerate for 20 minutes.
Cut the chilled sausage into several small pieces. From each piece, roll a neat ball, approximately the size of a ping-pong ball.
Roll each candy in the coconut flakes. Place the finished candies on a plate and refrigerate for 30 minutes or longer to allow them to firm up.
Serve these delightful carrot candies, garnished with fresh mint for added aroma and freshness.
