Take 12 of the cut-out circles. Using a small, sharp knife, carefully cut out triangular "eyes," a "nose," and a "mouth" on them to create funny "faces" for your cookies.
Apply the prepared filling to 12 circles without the cut-out "faces." Carefully place the circles with "faces" on top and press gently to ensure they adhere well. From the remaining dough, form small "stems" for the pumpkins and attach them to the top of the "faces." Use a knife to create radiating lines from the top, mimicking the pumpkin's texture. Bake the cookies in a preheated oven at 160°C for about 15 minutes, then allow them to cool completely.
To complete the look, mix the powdered sugar with orange juice until you have a smooth glaze. Carefully brush this glaze over the cooled cookies to give them an appetizing shine and an extra citrusy aroma.
Allow the butter to reach room temperature and cream it thoroughly with a wooden spoon. Incorporate the flour, sugar, and fragrant orange zest. Knead into a smooth dough, form a ball, wrap it in plastic film, and refrigerate for 1 hour to chill thoroughly.
On a lightly floured surface, roll out the chilled dough into a thin sheet, approximately 3 mm thick. Using a round cutter or a glass, cut out 24 circles with a diameter of 7.5 cm. Carefully transfer them to a baking sheet lined with parchment paper.
Prepare the delicate filling. Melt the chocolate. In a separate bowl, whisk the mascarpone with powdered sugar until fluffy, then gently fold in the melted chocolate to achieve a uniform consistency.
