Start with preparation: thaw the shrimp, thoroughly wash and pat dry the tomatoes and parsley with a paper towel. Peel the onion and garlic. Prepare a pot for the pasta and a deep skillet for the sauce.
Place a pot of water on the stove, add salt, and bring to a boil. Submerge the fettuccine pasta in the boiling water and cook according to package directions until al dente. Afterward, drain the pasta using a colander.
Finely chop the onion and press the garlic. In a deep skillet, melt the butter and sauté the onion and garlic for 5-7 minutes, stirring occasionally, until golden and fragrant.
Dice the tomatoes into small pieces. Add them to the pan with the sautéed onions and garlic. Pour in the vodka and cream, then add the lemon zest. Mix all ingredients thoroughly to combine them evenly.
Let the sauce simmer for about 5 minutes until it thickens slightly and the flavors meld. Then, add the shrimp to the pan. Season the dish with salt and pepper to taste, and stir gently.
Add the cooked pasta to the pan with the sauce and shrimp, mix thoroughly, and leave on the heat for 2-3 minutes to allow the pasta to absorb the sauce. Finely chop the parsley and add it to the dish. Stir once more and remove the pan from the stove.
Serve the fragrant creamy shrimp pasta immediately after preparation. For an attractive presentation and enhanced flavor, garnish each portion with fresh cherry tomato halves.
