Prepare the eggplants: without removing the stems, prick them all over with a fork. Place the eggplants on a foil-lined baking rack and put them in an oven preheated to 200°C. Bake for 40–50 minutes, until the skin blackens and chars, and the flesh becomes very soft.
Allow the baked eggplants to cool slightly, then slice them in half lengthwise. Carefully scoop out all the pulp with a spoon, mash it with a fork, and drizzle with fresh lemon juice.
Crush the garlic and sea salt in a mortar until a smooth paste forms. Mix this paste with the tahini.
Add the tahini and garlic mixture to the mashed eggplant and mix thoroughly. Season with pepper to taste and let the baba ghanoush rest for about 20 minutes for the flavors to meld harmoniously.
