Thoroughly rub the prepared duck with the orange marinade, both inside and out. Place the duck in a container, seal it tightly with a lid, and refrigerate for at least 8 hours to allow it to fully absorb the flavors.
Preheat the oven to 200°C. Cut the apples into small pieces and carefully stuff the duck with them. Secure the skin with toothpicks to prevent the filling from falling out. Place the remaining apple slices on the bottom of a baking dish, then place the duck on top. Pour a little water into the dish.
Bake the duck for approximately 1 hour on the middle rack of the oven. Afterward, cover the dish with foil and continue cooking for another 30–40 minutes to ensure the duck becomes exceptionally tender and juicy. Remove the dish from the oven, let the duck rest for 10 minutes, then serve, garnished with fresh rosemary sprigs.
Wash the oranges thoroughly with hot water, then dry them with a paper towel. Carefully remove the zest using a grater and squeeze out the juice. Mix the freshly squeezed orange juice with dried garlic and add salt to taste to create a flavorful marinade.
