Start with the carrots: wash them thoroughly, peel them, and slice them into neat rounds about 1 cm thick. This will give the dish a beautiful appearance and ensure even cooking.
Heat a skillet and add olive oil. Add the chopped carrots and sauté, stirring occasionally, for about 10 minutes. The carrots should become tender but still have a slight crispness.
Next, add the green peas and cauliflower, first breaking the latter into small florets. Simmer the vegetables over medium heat, covered, for another 5 minutes. If a lot of liquid has accumulated during cooking, remove the lid and allow it to evaporate.
Finally, season the vegetables with salt and a fragrant blend of Provence herbs. Cover the pan with a lid and immediately turn off the heat. Let the dish rest for 10-15 minutes to allow all the flavors to meld harmoniously. Before serving, stir and sprinkle with finely chopped cilantro for freshness and a vibrant aroma.
