Embark on a culinary adventure by chopping the chocolate. Dice it into small, delectable pieces to ensure even distribution throughout the rolls.
Place a small piece of chocolate on each prepared rectangle of dough. Carefully roll the dough and chocolate into uniform-sized spirals.
For the finishing touch, brush the surface of the rolls with the remaining egg mixture and sprinkle generously with sugar. Bake in a preheated oven at 180°C for about 15 minutes, carefully monitoring to ensure the sugar doesn't burn and the rolls turn a golden color.
Roll out the puff pastry to a thickness of 2–3 mm, moving in only one direction to maintain its flaky structure. Then carefully cut each sheet into 12 equal rectangles. Whisk an egg with one tablespoon of water until smooth. Using a brush, carefully coat each rectangle with this mixture, being careful not to touch the sides, so that the rolls rise well during baking.
